Chicken with Winter Squash


Our new year's resolutions for 2009 included not only eating healthier but to also increase our repitare of foods by cooking a new meal(to us) every week. In my New Years resolution blog I also said I would put each meal into a blog so that my ten or less readers could see what we were eating :) This is the first of many blogs (at least 52) all consisting of the foods that reach our table.

Our menu consisted of a garden salad with romaine lettuce, tomatoes, and fresh mozzarella cheese and a chicken breast cooked with fresh diced winter squash(butternut and acorn), diced potatoes(also fresh I suppose) basted with olive oil, rosemary, fresh basil, garlic, salt and pepper. We also had a fresh baked loaf of cheese & herb seasoned bread and corn(from a can lol)

The prep was about 20 minutes with the cook time being 3 hours at 350 degrees. Once it reached the table the chicken was so tender it didn't take much to tear it into bite size pieces and the flavor was outstanding, I give it four forks(one for each member of the family lol)

With the water we washed it down with this meal was really good, both for our health and for our palette.

  1. Chrissy! I would highly recommend subscribing to Cooking Light magazine! IT IS AWESOME! Lot's of really good recipes & they often transform old favorites. I've gotten it for years and love it! It also really helps with ideas for how to combine/decide which carbs/fats/proteins to serve and eat! I love it! :)
